Monterubbiano is one of those inland villages that most people drive past on the way to somewhere else. It sits on a ridge above the Aso valley, with an orange flag from the Touring Club and the kind of medieval centre that makes you wonder why you didn't stop the last three times you passed through.

VIN'S is a reason to stop and leave.

Paola Cesetti and Marco Cordola opened the wine bar and restaurant in the summer of 2024, inside a restored palazzo opposite the Teatro Pagani — vaulted brick ceilings, terracotta floors, and a shelving system that puts the bottles front and centre where you can actually look at them. They won a public competition to revitalise historic spaces in the village centre, which is a good story for a good place.

The wines

The selection is built around natural wines — Italian and French mostly, with excursions into Spain, Istria, and Germany. No famous labels, deliberately. The list is piccoli produttori biologici e biodinamici — small organic and biodynamic producers with a story behind each bottle.

"Niente etichette blasonate, ma un'accurata selezione di vini naturali italiani e francesi. Tanti piccoli produttori biologici e biodinamici, con una loro storia da raccontare, ma che vale la pena ascoltare per poi poterla ritrovare nel bicchiere."

No prestigious labels, but a careful selection. Small producers with stories worth hearing — stories you then find in the glass. That's the idea, and it holds up.

There's also cider, in several versions, for when wine isn't the answer.

The food

Paola cooks. The menu changes often, chasing the season and whatever the market offers that week. The approach is described well in a single phrase: cucina sincera tra la vita di paese — honest cooking in the middle of village life.

What that looks like on the plate: a fried salt bombolone with Ciauscolo and Emmental, handmade olive all'ascolana, beetroot cream with goat's cheese, cherries and mustard, aubergine with miso and sesame, baccalà with potatoes and olives. Charcuterie and cheeses from small local producers. A crescia from Urbino with lentil dal.

The food is the kind that surprises you — not in a theatrical way, but in the way that you realise midway through that this is better than it needed to be.

"Paola è un'ottima cuoca e padrona di casa," one reviewer wrote simply. An excellent cook and host. Which is everything, really.

The cocktails

Mario Piras runs the bar, and the cocktails are serious. A Back to Basil with homemade basil gin, fresh lemon juice and simple syrup. A Ganzo n' Roses with Vermouth, Campari, Gin and rose water. A Lovers in Japan with Sake and Yuzu. They're the kind of drinks that give you a reason to arrive early and stay late.

The terrace

In summer, the real heart of VIN'S is outside. There's a dehor — a terrace — right in front of the building, on the square, facing the theatre and the church of San Francesco. Evening aperitivo, dinner under the sky, and then whatever the night becomes. It's one of those outdoor spaces that makes a village feel alive.

From aperitivo to late night, a fresh breath of air in this historic Fermo village.


One reviewer called it "un posto speciale — scoperto per caso e rivelatosi una meravigliosa sorpresa." A special place, found by chance, a wonderful surprise. That's a fair description of what VIN'S is, and of what Monterubbiano has become with it.

From Gelsomoro it's about twenty minutes inland. Worth every one of them.
